Black Bean, Chickpea & Avocado Salad

DRESSING

  • 1 tsp Lime rind
  • 1/4 Cup Lime juice
  • 1/4 Cup Olive Oil
  • 2 Cloves Garlic, minced
  • 1 Jalapeno, finely chopped
  • Salt & Pepper to taste

Directions:
Whisk together all ingredients. Set aside.

SALAD

  • 2 Cups Cooked Black Beans or  1 (19 oz , 540ml can) black beans, drained and rinsed
  • 2 Cups Cooked chickpeas or 1 (19 oz, 540ml can) chickpeas, drained and rinsed
  • 2 Tomatoes chopped
  • 2 Green Onions, chopped
  • 1 Avocado, peeled and chopped

Directions:
Combine all salad ingredients in large salad bowl. Add dressing and mix to combine.  Refrigerate 1 hour before eating.
